The BEST Fresh Milled Hummingbird Cake (Soft, Moist & Old-Fashioned)

If you grew up in the south, chances are you’ve had hummingbird cake at least once. And if you’re anything like me, it quickly becomes one of those desserts you never forget.

I grew up in the South where old-fashioned cakes were part of every holiday table. Church potlucks, Easter dinners, family reunions — there was always a beautiful layer cake somewhere on the table.

And hummingbird cake was one of the best!

With its sweet bananas, crushed pineapple, toasted pecans, and rich cream cheese frosting, it’s the kind of cake that people take one bite of and immediately ask for the recipe.

Today it’s still one of my top five favorite cakes of all time, and after years of baking it with freshly milled flour, it has become one of the most requested desserts in our home.

Every time I bring this cake somewhere, someone inevitably says what is in this cake?

And the secret? Fresh milled flour!

Why Fresh Milled Flour Makes the Best Hummingbird Cake

Fresh milled flour adds a depth of flavor that store-bought flour simply can’t match!

When you use freshly milled soft white wheat, the cake turns out incredibly tender while still having that rich, wholesome flavor.

Hummingbird cake is already known for being a moist cake thanks to the bananas and pineapple, and fresh milled flour complements those flavors beautifully.

The result is a cake that tastes old-fashioned, rich, and incredibly satisfying.

It’s the kind of cake that feels special enough for holidays like:

• Easter

• Mother’s Day

• Spring gatherings

• Family celebrations

But honestly? It’s so good that we make it year-round.

What Is Hummingbird Cake?

Hummingbird cake is a classic Southern layer cake made with:

  • ripe bananas
  • crushed pineapple
  • toasted pecans
  • warm cinnamon
  • cream cheese frosting

It first became popular in the United States in the late 1970s after being featured in Southern Living magazine, and it quickly became a staple dessert across the South.

The combination of tropical fruit and rich frosting makes it incredibly moist and flavorful.

Tips for Baking Cakes with Fresh Milled Flour

Fresh milled flour behaves a little differently than white flour, but once you understand it, the results are incredible.

Here are a few tips I’ve learned after years of baking this cake with fresh flour:

Use Soft White Wheat

Soft white wheat creates the most tender cakes. Hard wheat will make the cake heavier and more bread-like.

Let the Batter Rest

Allowing the batter to rest for about 10 minutes before baking helps hydrate the bran and creates a softer crumb.

Don’t Overmix

Mix until just combined to keep the cake light and fluffy.

Frosting Tips for the Best Results

Cream cheese frosting is the traditional frosting for hummingbird cake, and it pairs perfectly with the banana and pineapple flavors.

But here’s a little bakery secret:

This cake actually tastes even better when it’s made ahead of time.

My Favorite Method

  1. Bake the cake layers.
  2. Let them cool completely.
  3. Wrap each layer tightly in plastic wrap.
  4. Freeze overnight.
  5. Frost the cake the next morning/afternoon, depending on when you want it thawed.

Freezing the layers helps lock in moisture and makes the cake easier to frost.

Many professional bakeries do this because it improves both texture and flavor.

Storage Tips

Hummingbird cake stores beautifully, which makes it perfect for holidays and gatherings.

Room Temperature

Unfrosted layers can sit at room temperature for about 24 hours if wrapped well.

Refrigerator

A frosted cake should be stored in the refrigerator and will keep for 4–5 days.

Freezer

Cake layers freeze extremely well.

Wrap tightly in plastic wrap and then foil.

They will keep for up to 3 months.

To use, thaw overnight in the refrigerator and frost as usual.

Why This Cake Is Perfect for Easter

Hummingbird cake feels like the perfect spring dessert.

The flavors are bright, sweet, and comforting all at the same time.

It’s beautiful on an Easter table, especially topped with:

• toasted pecans

• pineapple flowers

• banana chips

• or even a few edible spring flowers

And because the cake layers can be made ahead and frozen, it’s a great dessert when you’re preparing for a big holiday meal.

Frequently Asked Questions

What is the best wheat for fresh milled cakes?

Soft white wheat is the best choice for cakes. It has a lower protein content, which creates a lighter and more tender crumb.

Can I use other flour in this hummingbird cake?

Yes, but I’m not sure what the exact substitution would be. I think fresh milled flour works beautifully in a hummingbird cake, and the bananas and pineapple really help the cake stays moist and tender even with whole grain flour.

Do bananas need to be mashed for hummingbird cake?

They can all be mashed, or sliced or diced, I like to do a mix. Banana pieces create small pockets of sweetness throughout the cake and help prevent the batter from becoming too dense.

Why is hummingbird cake so moist?

The combination of bananas, crushed pineapple with juice, and oil or butter creates a very moist cake texture.

These ingredients provide natural moisture that keeps the cake soft for days.

Can hummingbird cake be made ahead of time?

Yes, and it’s actually better when made ahead.

Bake the layers, wrap them tightly, and freeze overnight. Frost the cake the next day for the best texture and flavor.

Can hummingbird cake be frozen?

Absolutely. Unfrosted cake layers freeze very well for up to three months.

Just wrap them tightly and thaw overnight in the refrigerator before frosting.
