Ingredients
- 190 g (1½ cups) freshly milled wheat flour
- 8 g (2 teaspoons) baking powder
- 4 g (¾ teaspoon) salt
- 57 g (¼ cup) cold butter, cut into pieces
- 100 g (1 cup) finely shredded sharp cheddar cheese
- 1 large egg, lightly beaten
- 95 g (⅖ cup) half-and-half, plus more as needed
- 14 g (1 tablespoon) melted butter, for brushing
Directions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the freshly milled flour, sugar, baking powder, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs with some small pieces of butter remaining.
Stir in the shredded cheddar cheese.
In a separate bowl, whisk together the egg and half-and-half. Pour the wet ingredients into the flour mixture and gently stir just until a soft dough forms. If needed, add a small splash of half-and-half. Avoid overmixing.
