The Best Fresh-Milled Cheddar Scones | Easy Savory Scone Recipe

190g1½ cups Hard White wheat berries, fresh milled wheat flour
Dry Ingredients

120g1/2 cup cold butter, cut into small pieces

1cuphalf and halfplus 1–2 Tbsp extra if dough seems dry

Instructions
Combine the dry ingredients. In a large bowl, whisk together the freshly milled flour, sugar, baking powder, seasonings, and salt.
Cut in the butter. Add the cold butter and cut it into the flour mixture with a pastry cutter or your fingertips until the mixture resembles coarse crumbs, with a few small pieces of butter remaining.
Add the cheddar. Stir in the shredded cheddar cheese until evenly distributed.
Mix the wet ingredients. In a small bowl, whisk together the egg and half-and-half. Pour into the flour mixture and gently stir just until a shaggy dough forms. Do not overmix.
Let the flour hydrate. Cover the bowl and let the dough rest for 10–15 minutes. This short rest allows the freshly milled flour to absorb the liquid and soften the bran, resulting in a more tender scone.
Preheat the oven. While the dough rests, preheat the oven to 400°F. Line a baking sheet with parchment paper.
Shape the scones. Turn the dough onto a lightly floured surface and gently bring it together. Pat into a circle about 1 inch thick. Cut into 8 wedges, or use a biscuit cutter for round scones. Handle the dough as little as possible.
Finish. Transfer the scones to the prepared baking sheet and brush the tops with melted butter. For extra cheesiness, sprinkle with a little additional shredded cheddar.
Bake. Bake for 18–22 minutes, or until the tops and edges are lightly golden and the centers are cooked through.
Serve. Let cool for about 5 minutes before serving.
